Blanched samphire with garlic, lemon and olive oil

Goes with

Rakı

The briny, sea-salt taste of samphire is one of the cleanest matches for rakı.

Also good with white wine.

Our chef's recipe, coming soon. This is the classic version, as it is made on most meyhane tables.

Ingredients

Method

  1. Wash the samphire well and pick out any tough pieces.
  2. Boil in unsalted water for 5 to 8 minutes until tender, then plunge into iced water.
  3. Pull each stem through your fingers to strip the flesh from the woody core and discard the core.
  4. Dress with the garlic, oil and lemon juice. It is naturally salty, so taste before adding any salt.
